Raw Unfiltered Honey produced in the middle of the 1,136 acre biodynamic Nutrient Farm in New Castle, Colorado.

Raw unfiltered honey is a natural product made by bees and is distinct from regular commercial honey in several ways:

  1. Processing: Raw honey is not pasteurized or processed. It's extracted from the honeycombs of the hive and poured over a mesh cloth to separate the honey from impurities like beeswax. Unlike processed honey, it doesn't undergo pasteurization (heating at high temperatures).

  2. Appearance: Raw unfiltered honey is often cloudier than filtered honey due to the presence of more pollen, honeycomb bits and propolis. These components add to its richness and complexity of flavors.

  3. Nutritional Content: It retains more natural vitamins, enzymes, phytonutrients, and antioxidants compared to processed honey. The filtration and pasteurization process in regular honey can reduce these beneficial nutrients.

  4. Taste and Texture: The flavor and texture of raw unfiltered honey can vary significantly depending on the types of flowers the bees have visited. It tends to have a more complex flavor profile compared to the more uniform taste of processed honey.

  5. Health Benefits: Due to its minimal processing, raw unfiltered honey retains its natural properties. It's believed to offer health benefits like antibacterial and anti-inflammatory effects.

  6. Storage: Raw honey can crystallize over time, which is a natural process and doesn't indicate spoilage. The crystallization can be reversed by gently warming the honey jar in a pot of warm water.

  7. Usage: It's used in a variety of ways, from sweetening foods and beverages to being applied topically for skin care, thanks to its moisturizing and antibacterial properties.

It's important to note that raw honey, like other unpasteurized products, may contain bacteria harmful to infants or individuals with weak immune systems. Therefore, it's recommended not to give raw honey to children under one year of age.
