Sweet corn (Zea mays var. saccharata) is a variety of maize grown for its high sugar content, typically harvested when the kernels are immature and tender, before the sugars convert to starch. It has tall, grassy stalks reaching 6-10 feet, with broad, green leaves and tassels that produce pollen. The ears, usually 6-10 inches long, are encased in green husks with silky threads and contain rows of juicy, sweet kernels in colors like yellow, white, or bicolor (e.g., Butter and Sugar). Popular varieties include Silver Queen (white, creamy, and sweet), Honey Select (yellow, tender, and sugary), and Peaches and Cream (bicolor, balanced sweetness). Sweet corn weighs about 0.5-1 pound per ear, depending on size and variety. Rich in carbohydrates, fiber, and vitamins like C and B, it’s a summer staple, often boiled, grilled, or steamed for its crisp texture and naturally sweet flavor. Harvested in summer when kernels are plump and release a milky liquid when pierced, it’s grown widely in warm climates like the U.S. Midwest.
