Yellow summer squash is a type of summer squash (Cucurbita pepo) with bright yellow skin, tender flesh, and a mild, slightly sweet flavor. It is harvested young while the skin is still soft and edible.

Appearance: Yellow skin (smooth or slightly bumpy/warty). Two main shapes:
- Crookneck — curved or bent neck with a bulbous base
- Straightneck — more cylindrical or tapered, without the curve
- Texture & flavor: Thin edible skin, soft pale flesh, mild and slightly sweet (similar to zucchini but often a bit seedier).
- Size at harvest: Best when small to medium (usually 5–8 inches long); larger ones become tougher and more seedy.
- Season: Peak in summer; available year-round in many markets.

- Yellow Crookneck (the classic curved variety)
- Yellow Straightneck (easier to slice evenly)
- Yellow or golden zucchini (more cylindrical)
- Some yellow pattypan/scallop varieties
Culinary uses
It is very versatile and often used interchangeably with zucchini. Common preparations include sautéing, grilling, roasting, steaming, frying, or using raw in salads. It works well in casseroles, stir-fries, soups, and baked dishes.
Note: “Yellow squash” usually means these soft-skinned summer types. It is distinct from hard-skinned yellow winter squash (such as certain acorn or banana squash varieties).
